Ingredients

  • 2 tilapia fillets
  • 1 cup jollof rice
  • 1 large plantain, sliced

  • 2 tablespoons palm oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat 1 tablespoon of palm oil over medium heat. Add chopped onions and sauté until translucent.
  2. Add diced tomatoes and cook until the mixture thickens, about 5 minutes.
  3. Stir in the jollof rice and 2 cups of water. Season with salt and pepper. Bring to a boil, then lower the heat, cover, and simmer for 20 minutes until rice is cooked.

  6. In the last few minutes of cooking, add sliced okra to the jollof rice to steam.
  7. Serve the tilapia on a plate with jollof rice and fried plantains on the side. Garnish with groundnuts if desired.
