Ingredients

  • 1 lobster, cleaned and halved
  • 1 cup clams, cleaned
  • 2 medium potatoes, diced
  • 2 tablespoons maple syrup
  • 1 cup kale, chopped
  • 1 cup carrots, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes.
  3. After 15 minutes, add the lobster halves and clams to the baking sheet. Drizzle the maple syrup over the lobster and clams. Return to the oven and bake for an additional 15 minutes, or until the lobster is cooked through and the clams have opened.
  4. While the seafood is baking, heat a skillet over medium heat. Add a splash of olive oil and sauté the kale and carrots for about 5-7 minutes until the vegetables are tender. Season with salt and pepper.
  5. Once everything is done, serve the lobster and clams on a plate alongside the roasted potatoes and sautéed kale and carrots. Garnish with fresh herbs if desired.
