Ingredients

  • 1 lobster, cooked and cleaned
  • 8 scallops
  • 2 cups kale, chopped
  • 2 medium potatoes, diced
  • 2 tablespoons maple syrup

  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread the potatoes on a baking sheet and roast in the oven for 20 minutes, or until golden and crispy.
  4. While the potatoes are roasting, heat a non-stick skillet over medium heat.
  5. Add the scallops to the skillet and sear for about 2-3 minutes on each side until they are golden brown. Remove and set aside.
  6. In the same skillet, add the chopped kale and sauté for 2-3 minutes until wilted. Season with salt and pepper.

  8. To serve, place the sautéed kale on a plate, add the roasted potatoes, and top with the seared scallops and lobster pieces.
  9. Drizzle with a little extra maple syrup if desired.
