Step 1: Begin by preparing your ingredients. Slice the pork tenderloin into thin strips, about 1/2 inch thick. This will allow the pork to cook quickly and absorb the flavors of the sauce. Set the sliced pork aside.
Step 2: If you’re using dried seaweed, soak it in warm water for about 5-10 minutes until it softens, then drain and cut it into bite-sized pieces. If using nori, you can simply cut it into strips without soaking. Set aside the seaweed.
Step 3: In a small bowl, combine the chili sauce and soy sauce. This mixture will serve as the main flavoring for your stir-fry. Adjust the amount of chili sauce according to your spice preference.
Step 4: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the minced garlic and ginger. Sauté for about 30 seconds, just until fragrant. Be careful not to burn them, as they can turn bitter.
Step 5: Add the sliced pork to the skillet. Stir-fry the pork for about 4-5 minutes, or until it is cooked through and no longer pink. Make sure to stir continuously to ensure even cooking and to allow the pork to absorb the flavors of the garlic and ginger.
Step 6: Once the pork is cooked, add the prepared seaweed to the skillet. Stir well to combine the seaweed with the pork, allowing it to heat through for an additional 2-3 minutes.
Step 7: Pour the chili and soy sauce mixture over the pork and seaweed in the skillet. Toss everything together, ensuring that the pork and seaweed are evenly coated with the sauce. Cook for another 2-3 minutes, allowing the sauce to thicken slightly and cling to the ingredients.
Step 8: As a final touch, sprinkle the chopped green onions over the stir-fry. Stir to incorporate them into the dish, adding a fresh, vibrant flavor.
Step 9: Once everything is well combined and heated through, remove the skillet from the heat. Taste the stir-fry and adjust seasoning if necessary, adding more chili sauce or soy sauce if desired.
Step 10: Serve the Spicy Pork & Seaweed Stir-Fry immediately, either on its own or over a bed of steamed rice or noodles for a complete meal. Enjoy the wonderful combination of flavors and textures!
