Ingredients

  • 1 cup rice
  • 1 can coconut milk

  • 2 tbsp tamarind paste
  • 8-10 curry leaves
  • 1 tsp fenugreek seeds
  • 1 inch ginger, minced
  • 1 tsp mustard seeds
  • 2 cups jackfruit, chopped
  • 2 cups Malabar spinach, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions.
  2. In a large pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter.
  3. Add minced ginger, curry leaves, and fenugreek seeds. Sauté for 1-2 minutes until fragrant.
  4. Add chopped jackfruit and cook for about 5 minutes until it starts to soften.
  5. Stir in the coconut milk, cinnamon, cardamom, and tamarind paste. Season with salt. Bring to a simmer.
  6. Add the Malabar spinach and cook for an additional 5 minutes until the spinach is wilted and the jackfruit is tender.
  7. Serve the curry over the cooked rice.
