Ingredients

  • 1 cup couscous
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 lemon, juiced
  • 1 tablespoon Ras el hanout
  • 1/2 cup dried apricots, chopped
  • 1/4 cup almonds, roughly chopped
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon harissa (optional for extra heat)
  • Salt and pepper, to taste

Instructions

  1. In a medium saucepan, bring 1 cup of water to a boil. Add a pinch of salt and the couscous, stir, and cover. Remove from heat and let it sit for 5 minutes.
  2. While the couscous is resting, heat the olive oil in a skillet over medium heat. Add the chickpeas and cook for about 5 minutes, stirring occasionally.
  3. Stir in the Ras el hanout and continue to cook for another 2 minutes until fragrant.
  4. Add the chopped dried apricots and almonds to the skillet, mixing well. Cook for an additional 2-3 minutes until heated through.
  5. Fluff the couscous with a fork and add it to the skillet with the chickpeas and apricot mixture. Squeeze the lemon juice over the top, and add salt, pepper, and harissa if using. Mix to combine.
  6. Remove from heat and stir in the fresh cilantro.
  7. Serve warm and enjoy your spicy couscous dish!
