– 1 cup (185 g) rice
– 1 cup (240 g) canned beans (any type)
– 1 cup, sliced (70 g) mushrooms
– 2 cups (60 g) fresh spinach
– 2 tablespoons (30 ml) olive oil
– 2 cloves, minced garlic
– to taste salt
– to taste pepper

Instructions

Cook the rice according to package instructions. This usually takes about 15 minutes.

While the rice cooks, heat olive oil in a skillet over medium heat.
