1 pound (450 g) ground beef
2 medium (about 1 pound / 450 g) zucchini
1 cup (190 g) rice
2 tablespoons (30 ml) soy sauce
2 cloves, minced garlic
1 tablespoon (15 ml) olive oil
to taste salt
to taste pepper
Cook the rice according to package instructions. This should take about 15 minutes.
While the rice is cooking, wash and slice the zucchini into half-moons.
In a large skillet, heat the olive oil over medium-high heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.
Season the beef with salt and pepper to taste.
Add the zucchini to the skillet and stir-fry for another 5-7 minutes until the zucchini is tender but still crisp.
Pour in the soy sauce and mix well to combine all the flavors.
Serve the stir-fry over the cooked rice.
