1 lb (450 g) chicken drumsticks
1 lb (450 g) ground beef
2 medium (about 1 lb / 450 g) zucchini
1 cup (200 g) rice
2 tbsp (30 ml) soy sauce
2 tbsp (30 ml) olive oil
2 cloves garlic
1 tsp (5 g) ginger
to taste salt
to taste pepper
Preheat the oven to 400°F (200°C). Place the chicken drumsticks on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 25-30 minutes until cooked through.
While the drumsticks are baking, cook the rice according to package instructions.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add minced garlic and ginger, sauté for 30 seconds.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).
Slice the zucchini into half-moons and add to the skillet. Stir-fry for another 5 minutes until the zucchini is tender.
Pour in the soy sauce, mix well, and cook for an additional 2 minutes.
Serve the stir-fry alongside the baked drumsticks and cooked rice.
