1 pound (450 g) ground beef
2 medium (250 g) zucchini
1 cup (200 g) rice
2 tablespoons (30 ml) olive oil
2 cloves, minced garlic
to taste salt
to taste pepper
1 teaspoon (5 g) Italian seasoning

Instructions

Cook rice according to package instructions (about 15-20 minutes).
While the rice is cooking, heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for 30 seconds until fragrant.
Add ground beef to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook until browned, about 5-7 minutes.
Slice zucchini into half-moons and add to the skillet. Stir-fry for an additional 5 minutes until zucchini is tender.
